The Products

In the Skaftafell Delicatessen, all of the meat I use is sourced from adult sheep reared in the Öræfi district - the stretch of land between the Skaftafell and the Jökulsárlón glacial lagoon. I buy the meat directly from my neighbors in the local farming community. During the smoking and curing process, the only additives I use are spices, nitrite salt and smoke. No MSG, no soy protein, no binders and no additional water is used.
It may be a bit unusual making sausage without any pork, there is very little sausage on the market that does not contain at least a portion of pork. I have nothing against pork in the sausage, but in our community not pigs are being bred and since my production is strictly based on local resources, there is no pork in my sausage. And it obviously does work very well. Try it for yourself!
Skaftafell Delicatessen are air dried and relatively firm in the bite. I prefer it that way, it just tastes better. The weight loss by drying, however, makes my products a bit more pricey than what you might know of goods with higher water content. In my opinion, the taste experience is more intense in drier sausages - you can just drink the water for free.
