The Concept
In recent years, the number of travelers who want to experience nature and culture of the host country in culinary ways has increased, and they are particularly interested in local specialties. This trend allows farmers and food producers in rural communities to offer their products to a wider audience.
In the Öræfi district, lamb and mutton, as well as milk production are the main sources of raw material for food production. Together with the development of a wide range of accomodation and tourist attractions, local food products could be part of a favourable experience which will make our guests want to stay longer in our community.
The concept of Skaftafell Delicatessen is based on three objectives. First and foremost, it is my intention to make great sausages. Secondly, I try to earn a living for myself and my family. Last but not least, I would like to build up a company that will create jobs in the future and so can contribute to the benefit of our small community.
My dream for the future is that we, the members of the Öræfi community will process all the meat produced here and market it directly. It would strengthen the image of the region as a place well worth visiting. If we could then switch to organic farming and environmentally save production, it would be a further advantage. The brand "Organically grown food from the Öræfi community" would doubtlessly be of great attraction for our guests. Not that there are too few travelers here. With a diverse and interesting offer that would satisfy most of the needs of our guests, they would certainly like to stay here longer. With all the positive effects for the future of our community.
